The American Cheese Society had an outstanding conference
in Madison, Wisconsin this past August 5-9, 1998. The conference was titled The Art of Cheesemaking. Topics included; hands on cheesemaking, cheese trivia, organic issues, cheese, wine and beer pairings, affinage, rennets and cultures, and discussions on the differences of cow, goat and sheep milk in cheese and butter.

A real dairy issue came up during the Regulatory & Environmental presentation. Codex Alimentarius is a joint program of the Food and Agriculture Organization of the United Nations and the World Health Organization that develops international food standards. Codex cheese standards are under the jurisdiction of the Codex Committee on Milk and Milk Products. The standards are initially drafted by the International Dairy Federation (IDF). Then at Codex, the standards are reviewed by government officials from around the world during an eight-step process. There are two types of Codex standards-general and individual varietal standards. As a U.S. Industry or as the U.S. government, we don’t have to adopt Codex standards. But, the issue is, if the rest of the world is able to use these standards including types of dairy ingredients (casein?)and limiting types of milks (pasteurized vs. unpasteurized) we will disadvantage ourselves by not taking
advantage of making our system compatible with the worldwide system. The American
Cheese Society has formed a Task Force to gather both scientific and procedural

The Annual Festival of Cheese (and butter) was incredible at Frank Lloyd Wright’s newly opened Monona Terrace Convention Center. Close to 400 cheeses and butters were entered in the Cheese Judging. I was one of the judges this year and it was a great experience. The top winners were:

  • Stella Foods Inc. received 3rd place in American-Made/Cow for their Parmesan and 2nd place in Blue-Veined & External Blue Cheese for their Blue
  • Tallamook County Creamery Association received 2nd place in Cheddar/Cow for their Sharp White Cheddar and 3rd place in Spiced, Herbed & Flavored/Cow for their Pepper Jack
  • Besiner America Inc. received 2nd place in Feta for their Tomato & Basil Feta.

The 34th Annual California Cheese & Butter Convention will be held at The Seascape Resort in Aptos, California April 22, 23 & 24, 1999.

Our Convention committee this year is chaired by Len Waters of Stella Foods, and his team includes Joanne Mesta of John J. Wollak Co., Inc., Mike Boggeri of J. Boggeri Company, Inc., Mike Gurtler of Marketing Specialists of Northern California and Radha Stern of California Cheese & Butter Association. We promise you a fun and educational convention!!!!

GOT MILK? is going national! The California Milk Processor Board and the Washington MilkPEP Board have agreed on a licensing deal for the popular Got Milk? Got Milk will now be added to all those great milk mustache print ads. Thanks for this updated mooos to Supermarket News

BUTTER MOOOS Dairy farmers are smiling! Sky-high demand for butter, ice cream, cream cheese and other products made from butterfat, coupled with sagging milk production has sent dairy prices soaring to record levels. That’s bad news for consumers but, welcome news to farmers struggling through some of the worst economic times since the 1980’s. The all time high butter price for 1997 was $1.95 per pound and it has toped at $2.81 per pound this year. The unusually hot weather in some states has contributed to the problem. Cows make less milk when it is hot, and people eat more ice cream. Eventually the free market will bring things back into line. HOLIDAY GOODNESS The holidays are right around the corner. Please don’t forget to do a good deed for the people in your community that are less fortunate. Cheese and butter are healthy foods.
