In the wake of the National Cheese Institute’s pending proposal to alter raw milk cheesemaking practices in the United States, the American Cheese Society sponsored along with Traci des Jardins of Jardiniere restaurant in San Francisco, created a forum, featuring a panel of cheese and dairy specialists, to discuss "Raw Milk Cheese: Does it Have a Future in the United States?" (June 16th, 1999) It is one of four such sessions the American Cheese Society plans to sponsor to educate people about the right to choose between pasteurized and unpasteurized milk during production. This issue had been a debate of The Codex Alimentarius, a commission to set safe and fair global trade practices. The impact mandatory pasteurization would have on the specialty food industry would be crisis level for small scale cheese producers. Just because it is pasteurized, does not mean it is safe. The California Cheese & Butter Association has secured convention locations for the next two years! So, mark you calendars now for great educational and social experience. The 2000 California Cheese & Butter Convention will be held May 4,5, & 6, 2000 at Lake Arrowhead Resort, Lake Arrowhead, California. The convention chair is Barry Zuroff of Horizon Sales Corporation 714.979.4844. The 2001 convention will be held April 19, 29 & 21, 2001 at the Resort at Squaw Creek, Olympic Valley, California. The convention chair has not been announced. Any volunteers?

At the last California Cheese & Butter Association Board Meeting, it was voted in by the board and officers to increase in the year 2000 and all future scholarships to $2000.00. The first increased scholarship will go to Cal Poly San Luis Obispo. this possible. The CCBA 1998-1999 recipient from University of California at Davis, Tom Trezza is a Ph.D. candidate majoring in Food Science. He is doing research with Dr. John Krochta on surface chemistry and the adhesion of degradable polymers utilizing dairy ingredients to foods and packaging. Congratulations! Tom Trezza has offered anyone from CCBA a tour of the school labs and the pilot plant. Call the CCBA office for details.

Go Brokers! Norseland, Inc., has awarded two of their most prestigious awards to California Brokers. Normark & Associates received the 1998 "Jarlsberg Cheese", Broker of the Year Award. Allan Baum was presented with the award at Norseland’s "Norwegian Cheese" Award ceremony in Oslo, Norway on June 13, 1999. Select Trade Sales received the 1998 "Boursin Cheese" Broker of the Year Award. Bob Austin was presented the award at Norseland’s "Boursin Cheese" award ceremony in Normandy, France on June 18, 1999. Congratulations!

Butter Mooos California lost it’s crown in the buttermaking ranking. Wisconsin is now number one. California has had the crown since 1993. There was a drop in butter production due to a huge demand for cream to make ice cream. It has been an unusually hot season for most of the nation this year. Thank mooo for this information go to:

The American Heart Association is taking a conservative stance on the new cholesterol-cutting spreads. The AHA nutrition committee doubts consumers will use enough of the spreads to get any significant results. A healthy diet and exercise program help lower cholesterol. Stay tuned. Jack Prince, the former CEO of Dairyman’s Cooperative Creamery Association - which merged into Land O’Lakes in 1998 - has been named the COO of the Dairy Foods Group, with primary responsibilities for the company’s nationwide milk procurement and dairy manufacturing system. Cheese Mooos Cheese demand has been growing significantly over the last few years and retail cheese sales through late April were ahead of sales a year earlier.

  • Natural cheese sales grew 10.9%
  • Chunk cheese sales grew 11.6%
  • Cheese shred sales grew 8.9%
  • Sliced cheese sales grew 6.5%
  • Processed sliced cheese sales grew 5.4%
  • Cream cheese sales grew 6.7%
  • Grated cheese sales grew 0.5%
  • Loaf cheese sales grew 0.7%
  • Cheese sauce sales grew 0.7%

Dairy sales have outpaced total store and dry grocery sales for the past two years! Go CHEESE!

In a recent issue of The New England Journal of Medicine, scientists debated the effects different kinds of fatty acids in butter and margarine have on cholesterol levels and coronary heart disease. They conclude that on a per-gram basis, the adverse effect of margarine’s trans fatty acids appears to be stronger than that of butter’s saturated fatty acids in relation to coronary heart disease!
