California Cheese & Butter Association’s 2002 Convention will be held at Temecula Creek Inn April 25 – 28, 2002.

Don Crabtree, of Continental Deli Foods, and Convention Chairman, has assembled a great group to assist in planning the Convention. They are Jerry Barringer of Gossner Foods, Inc., Darcie Gettings of McCadam Cheese Co., Inc., Jennifer Mullen of California Milk Advisory Board, Cindy Mulvaney of Unified Western Grocers, and Barry Zuroff of Horizon Sales Corporation. Temecula Creek Inn offers spacious comfort in a natural setting. California Cheese & Butter Association again plans to support the Race for the Cure in October, 2001, in Northern California and Southern California.

In San Francisco, plans are in place to participate in the kick-off reception. We will also have a booth at the race and will give out samples, recipes, etc.

In Temecula Valley, we will join together to walk/run in the race.

If you’d like to donate individual size products, promotional items or coupons, please call our office at (925) 672-8255. Additional information will be sent to you in the next few weeks.

Don’t forget the L.A. County Fair, which runs September 7-23, 2001. If you’re registered for the dairy products competition, product take-in is August 15 and 16, and judging will be done on August 18. Additionally, the Southern California Dairy Education and Training Center at Fairplex, A Non-Profit 501c3 Corporation, is sponsoring “Moonlight and Merlot”, a wine and cheese reception and gourmet dinner.

CCBA Welcomes New Member

R. W. Zant, was founded 51 years ago by Robert Willam Zant and is now operated by his son, William T. Zant. The company is a redistributor that sells exclusively to food service distributors, focusing on fresh and frozen meats and cheeses. Included in their operation is a chicken processing plant known as Commodity Sales. R.W. Zant also owns a freight forwarding company, Cal Hono, of Long Beach, which reforwards products in large containers throughout the Pacific Rim. The freight company ships R.W. GOLD TO THE LAST DROP

Golden Cheese Company of California operates one of the largest and most sophisticated fully integrated cheese and whey processing facilities in the world. And now they are even larger. Recent expansion of their facility in Corona, California enables this state of the art dairy processing plant to process almost two billion pounds of milk each year. In addition to producing premium Cheddar, Monterey Jack, Colby, and Mozzarella cheese, they produce specialized whey protein concentrate products. Indeed, every component of milk they process is used. Even the residual milk sugar is fermented and distilled to ethyl alcohol.

In the energy hungry environment we live in today, the production of alcohol is of vital interest. Permeate from the ultra filtration plant goes through a reverse osmosis process. Essentially, half the water is removed, effectively doubling the lactose concentration from 4.8 to between 9 and 10 percent. Yeast added to the dewatered permeate converts the lactose to ethanol and carbon dioxide. After fermentation, the spent yeast is recovered and the balance of the product is sent to a beer well and then to a distillation column where alcohol is extracted. Much of Golden Cheese’s alcohol production finds use as a fuel additive.

Golden Cheese is part of Dairy Farmers of America, America’s largest dairy cooperative. Milk for the plant is primarily provided by DFA member/owners. Their farms are located close to the plant, in and around Chino Valley. This area can boast of one of the most dense milk cow populations in the world. That guarantees an adequate supply of fresh, high quality milk for cheese making.

DFA’s nationwide footprint and Golden’s tremendous capacity and technical expertise enables them to supply a diverse, high volume customer base. These customers come from the food service, industrial, and retail arenas. Their state of the art, high volume shredding and cut and wrap operations enable them to meet the demands of some of the largest customers in the country.

Dave Simon, Golden Cheese Company’s President, has made it plain that their future is rooted in exceptional service, quality and value added products. That philosophy, combined with a highly efficient Corona plant, should ensure that the company will have a golden future indeed.

Here is our new block forecast based on Class III milk futures closing prices of August 3, 2001:

Although there have been some fairly significant daily swings in the futures market based on the news of the day, this forecast looks remarkable similar to the one published in the June 2001 Moos. Clearly, there is no market consensus for any striking changes on either the bullish or bearish side. Supply and demand appear to be in relative balance. If anything, futures prices have strengthened a bit – possibly due to the recent extreme heat in the Midwest and the sentiment that cheese supplies are shrinking as retailers prepare for the fall season.
