At the last meeting of the Board of the California Cheese & Butter Association the Lifetime Achievement award was renamed the Hall of Fame award. This year’s recipient is (drum roll!), Tom Hill! Tom was president of the California Cheese & Butter Association in 1987 and 1988. He was (and is) a very positive influence in the growth of our organization. Tom was born and raised in Detroit, Michigan and was working for Schreiber Foods when he joined CCBA. Tom is currently working for International Trading Company and is the National Sales Manager for the Food Service Division. Tom and his wife Nancy reside in Houston, Texas with two children Todd and Stephanie who are pursuing active careers. Congratulations!!! Tom will be joining CCBA at the convention, May 4, 5 & 6, 2000 at Lake Arrowhead Resort in Lake Arrowhead, California.

The convention chair is Barry Zuroff of Horizon Sales Corporation at 714.979.4844 if you have any questions.

The American Cheese Society conference will be held in Northern California this year!

August 9-13, 2000 at the Doubletree Hotel in Rohnert Park, California. I would encourage all of you to attend and cheesemakers to enter their products (cheese & butter) in the annual cheese judging. The conference is very educational and a good place to meet with industry leaders. For more information call 415.647.8088 and ask for Bill McKenna or check out the ACS website: www.cheesesociety.org

Darcie Gettings will resign from the CCBA Board after this year’s convention in Lake Arrowhead, California. Darcie’s new job is not in the dairy industry. Darcie will be missed!!! Don Crabtree will be moving up to the 2nd Vice President position and that will leave two board positions to fill.

The California Milk Advisory Board has launched a $2 million marketing campaign in Arizona extolling the virtues of Real California Cheese! CMAB is hoping to add a new market every year. The launch includes award winning TV commercials, billboard advertising, local media, point of sale material and in store sampling. Great job CMAB!!!!

The University of California, Davis has secured funding for a dairy foods research and education facility from UC Davis College of Agriculture and Environmental Services (CAES) and the Division of Agricultural and Natural Resources (DANR), and the Shields Endowment Fund. The Food Science and Technology Department envisions an approximately 1500 square foot facility which includes the following areas: 1) raw milk receiving, separation, homogenization and pasteurization, 2) cheese production, 3) cheese cultures, 4) frozen dairy desert production, butter production, and new product development. Shield Professor John M. Krochta is planning thee project. The University of California, Davis is a California Cheese & Butter Association scholarship school. Thank mooo to John Bruhn, at UC Davis for this mooos.

The Mooos ran across a wonderful Dutch recipe for Cheddar Cheese Cookies. These cookies are served for good luck at the New Year.

Cheddar Cheese Cookies

grate ½ lb. aged sharp cheddar

and cream with ¼ lb. sweet butter

one-cup flour

¼ teaspoon salt

dash of cayenne pepper

Roll into two sausages about one inch in diameter; cover with plastic wrap and chill – at least one hour.

Cut into ¼ inch slices and place on a buttered cookie sheet. Bake @ 350 for about 14 minutes. Don’t let them get to brown! You may freeze one of the rolls for another time.

Did you know?

  • A dairy cow must drink 4 gallons of water to produce 1 gallon of milk.

  • If California was a separate nation, it would rank 10th in the world in butter production.

Butter Mooos! There is finally a butter website. www.butterisbest.com
